While the inspiration dates back to the early 2000s, Aquarian Legacy Winery is a new chapter born from the spirit and tradition of Aurora Bitayson. Lyndi infused Aquarian Legacy Winery with her own modern flair while staying rooted in tradition. For her, this isn’t just about selling fruit wine. It’s about storytelling through flavour.
“Wines will always be our favorite. It evokes childhood memories of helping mom with her batches, taking a sip at Christmas dinner. Just joy and laughter that we still hold close to this day.”
The name Aquarian Legacy itself hints at something both astrological and ancestral. While Lyndi doesn’t outright say who passed it on, her passion for preserving something meaningful shines through. Each decision, from the branding to the ingredients, is rooted in emotional connection and shared experience.
From Local Produce to Luxury Experience
At Aquarian Legacy Winery, fruit wines aren’t an afterthought. They’re the main event. Whether it’s mango, sorrel, or five-finger, each wine tells a story of local flavour meeting small-batch craftsmanship. But Lyndi isn’t just making wine. She’s making memories.
“We want them to feel the joy of spending time with family across generations.”
Her mission is to make Aquarian Legacy Winery the “Angostura of fruit wines in the Caribbean.” That means scaling, innovating, and turning fruit wine into a regional export powerhouse, while staying true to what makes it special.

Lyndi’s growth as an entrepreneur wasn’t a solo mission. Along the way, she tapped into a variety of ecosystem support, most notably through Youth Business Trinidad and Tobago (YBTT).
She completed YBTT’s agri-business training in 2016, and was later selected for the LiveWIRE Accelerator programme, where she gained technical skills, business coaching, and strategic direction. One key takeaway,
“Take the time to pour into yourself as an entrepreneur, not just the business. If you only work in your business then there is less time to work on the business.”
The support from YBTT helped Lyndi balance the emotional weight of rebranding a family-rooted business with the structure and confidence needed to scale it.

“Observe everything. From the raw materials, to the process, to the finished product. What went good or bad and why. How can you make it better?”
